World renowned producer Edwin Noreña Strawberry and Cinnamon Red Honey Mossto CoFerment brings a multi-dimensional tasting experience. The coffee seeds go through a Red Honey processing protocol with a reintroduction of Strawberry and Cinnamon mossto to the fermentation. This creates a pleasant textural experience of cinnamon bitterness followed quickly by fruit reduction sweetness. This is balanced by a delicate florality and a finish of black cherry.

Our Roasting Style
We will try to roast these coffees to an omniroast profile that works in all methods, we roast on a Loring 35kg and will aim for a lighter than medium roast- (40% on our scale) or for you in the know 410-415F end temp, ~10 min total time for all lots with tailoring done for each methods ability to take on heat.
