Don Luis Campos constantly seeks new and innovative ways to enhance his coffee production and returns to our lineup with a favorite from Cordillera del Fuego. The remarkable set of processes behind this exquisite coffee is known as "Termico." The processing commences with the careful selection of ripe coffee cherries with high sugar content. The depulped coffee is placed into stainless steel tanks, complete with its mucilage, where fermentation begins and the coffee develops a unique blend of lactic and malic acids during this stage, which contributes to its intricate flavor. The coffee is sun-dried once ready, leading to notes of hibiscus and cinnamon, as well as a kombucha-like acidity.

Our Roasting Style
We will try to roast these coffees to an omniroast profile that works in all methods, we roast on a Loring 35kg and will aim for a lighter than medium roast- (40% on our scale) or for you in the know 410-415F end temp, ~10 min total time for all lots with tailoring done for each methods ability to take on heat.
