Nestled on the volcanic slopes of Mount Balàm, or “Hill of the Jaguar,” in Guatemala, this farm has been transformed under the guidance of Arnoldo Pérez Melendez and his family into a bastion of specialty coffee through pioneering processing techniques.**A Tradition Reimagined**
Arnoldo, along with his wife Maria Eugenia Escobar and their children, have redefined coffee cultivation in Aldea el Sacorro since taking stewardship of the 27-acre farm. With the help of our green-buying partner, Thomas from Red Beetle Coffee Lab, La Senda has shifted from commodity coffee to become a trailblazer in experimental coffee processing.**Innovative Processing**
Our “La Senda Champagne” undergoes an extended Carbonic Maceration process, a meticulous method typically reserved for high-end wine production. The ripe coffee cherries are first anaerobically fermented in a bioreactor infused with Carbon Dioxide, then depulped and fermented again, totaling over 300 hours. After this, the beans are semi-washed and laid out on African-style drying beds, shaded and hand-agitated for even drying over four weeks. This intensive care results in a coffee with a distinctively clean, complex, and layered profile.**Flavor Notes**
