Panama Atitlán, cultivated by Agratisa in the Atitlán region of Guatemala, spans 130 hectares at elevations from 750 to 1,500 meters. The estate, founded in 1936, produces a variety of Arabica and Robusta coffees, including Caturra, Catuai, Sarchimor, and Anacafé 14. The farm uses diverse processes like Washed, Natural, Honey, and Anaerobic, creating a rich flavor profile. Certified by Rainforest Alliance, Atitlán employs regenerative agriculture, including composting, rainwater harvesting, and organic matter integration. This sustainable approach preserves the environment while enhancing the coffee’s balanced and vibrant taste, offering a true expression of Guatemalan terroir.

Our Roasting Style
We will try to roast these coffees to an omniroast profile that works in all methods, we roast on a Loring 35kg and will aim for a lighter than medium roast- (40% on our scale) or for you in the know 410-415F end temp, ~10 min total time for all lots with tailoring done for each methods ability to take on heat.
