This Sareni lot from Buesaco, Colombia uses the Ethyl Acetate process, also known as "sugarcane" process, as the solvent used to extract the caffeine from the coffee seed. EA processing allows the caffeine to be extracted while still maintaining the flavor integrity of the seeds.
