Angelino Diaz, a coffee farmer from La Palma, El Salvador, defied the odds after the 2012 leaf rust outbreak. He shifted his focus to specialty coffee, prioritizing quality over quantity. Today, he cultivates Pacas, Pacamara, and Gesha varieties, meticulously selecting ripe cherries and employing both washed and natural processing methods. His commitment to quality and sustainable practices has not only improved his family's income but also established him as a respected producer in the region.

Our Roasting Style
We will try to roast these coffees to an omniroast profile that works in all methods, we roast on a Loring 35kg and will aim for a lighter than medium roast- (40% on our scale) or for you in the know 410-415F end temp, ~10 min total time for all lots with tailoring done for each methods ability to take on heat.
