From Where: Villa Pastora is a family legacy located in the municipality of Palestina, Huila. The farm was founded by Gerson Mora’s grandmother, Pastora Anacona, who passed her coffee-growing traditions and knowledge to the Mora Anacona family.

In the early 2000s, Villa Pastora was inherited by Gerson’s father, marking the beginning of the family’s journey into specialty coffee. Today, the farm has developed into a family-run agricultural business, bringing multiple generations together around coffee production. Gerson and his family now represent the third and fourth generations of coffee growers at Villa Pastora. 

Fermentation: After harvesting, the coffee cherries undergo an initial 72-hour anaerobic fermentation. The lot is then inoculated with a strain of Saccharomyces cerevisiae, a yeast selected for its ability to tolerate alcohol concentrations of up to 15%.

The cherries continue fermenting for an additional 120 hours. Once fermentation is complete, the coffee is depulped and submerged in water for 24 hours before being transferred to the drying stage.

Tastes like: Juicy peach rings up front followed by fresh Raspberry Jam, and ends with a complex white florals.
