This exceptional Ethiopian lot hails from the Sidama region, known for its rich coffee heritage. Sourced from Alemu Adema’s station in the Chiri district, near the Harenna Forest National Park, this natural-processed coffee is the result of collaboration with the Tadesse Desta Coffee Group. Several hundred local farmers deliver ripe cherries, which are carefully sorted and dried on raised beds for 15 to 20 days to ensure optimal drying conditions and prevent over-fermentation. Once the cherries reach 11% moisture, they are transported to the Tadesse Desta dry mill, where quality control continues through to the final export. This lot offers traceability, exceptional processing, and direct relationships with trusted partners.

Our Roasting Style
We will try to roast these coffees to an omniroast profile that works in all methods, we roast on a Loring 35kg and will aim for a lighter than medium roast- (40% on our scale) or for you in the know 410-415F end temp, ~10 min total time for all lots with tailoring done for each methods ability to take on heat.
