Edinson Argote Maragesha

Who:
Quebraditas Coffee Farm is a family-rooted  project in Oporapa, Huila, Colombia. Edinson Argote and his family work to celebrate the region’s coffee tradition while emphasizing quality, education, and innovative processing.

What:
Edinson's Maragesha is grown between 1,600 and 1,850 meters above sea level. At least 80% of the harvested cherries are ripe, and flotation removes green, overripe, and dried fruit.

The cherries undergo 24 hours of oxidation in food-grade plastic tanks before being dry-depulped. The coffee is then fermented for 72 hours using yeast and thermal shock. After fermentation, it is dried for 76 hours at an average temperature of 40°C and stabilized in GrainPro bags. Edinson identifies this process as Advanced Washed.

Why:
This coffee reflects Quebraditas’ goal of combining regional identity with precise, innovative processing. Controlled cherry selection, yeast fermentation, thermal shock, and temperature-managed drying are used to bring out Maragesha’s floral, herbal, and sweet qualities while preserving clarity and structure.

We're tasting:

It opens light, floral, and exceptionally clean, with honeyed sweetness, violet candy, and bergamot at the center. The florals feel layered and shifting—lavender, rose, and delicate white flowers—while the fruit changes as the cup cools, moving through ripe raspberry, strawberry, and candied lemon. Underneath, a subtle nuttiness and graham cracker sweetness add weight and structure without taking away from the coffee’s clarity or lifted character.
