Grown high in the Colombian Macizo at Finca Quebraditas, Edinson Argote’s Ombligón is a study in precision and intention. Ombligón — a rare Colombian mutation related to Bourbon — is known for its density and clarity at elevation, and here it thrives between 1,600–1,850 meters above sea level.
This lot undergoes Edinson’s Advanced Natural protocol — a highly controlled natural process designed to amplify fruit character while maintaining structure. Whole cherries are fermented with careful monitoring before slow drying, allowing layered sweetness and depth to develop without sacrificing cleanliness.
In the cup: juicy raspberry upfront, lifted by a bright streak of lemon candy acidity, settling into dark chocolate. It’s expressive and structured — fruit-forward, but anchored.
