Aguas Palestina Washed

Aguas de Palestina is a community-produced washed coffee from smallholder families in Palestina,Huila, grown at elevations ranging from 1,650 to 2,000 meters. Castillo and Colombia varieties are

cultivated in steep terrain shaped by consistent rainfall, cool temperatures, and careful land management. This lot reflects a collective commitment to water stewardship. Coffee is hand-harvested,depulped without water, fermented for 30–36 hours, lightly washed, and sun-dried on patios—an approach designed to preserve clarity while minimizing water use at every step. The cup is structured and transparent, with a lifted acidity and a soft, rounded sweetness that carries through the finish. Clean, deliberate, and quietly expressive, this is a washed Colombia that emphasizes balance, intention, and place over excess.
