Finca Las Chicharras, managed by E-Cafe Chiapas, placed 5th in Mexico's 2018 Cup of Excellence—an impressive achievement for a farm established in 2015. This award-winning operation not only produces exceptional coffee but also supports social programs, including the Icathus School for underprivileged children and community infrastructure projects. The coffee undergoes a meticulous process: handpicked, fermented for 10-14 hours, washed, and dried on raised beds at 30-35°C. After destoning, hulling, color sorting, and size grading, the result is a bright, Kenya-like coffee with vibrant acidity, showcasing the farm’s commitment to quality and community impact.

Our Roasting Style
We will try to roast these coffees to an omniroast profile that works in all methods, we roast on a Loring 35kg and will aim for a lighter than medium roast- (40% on our scale) or for you in the know 410-415F end temp, ~10 min total time for all lots with tailoring done for each methods ability to take on heat.
