Finca Las Chicharras, managed by E-Cafe Chiapas, earned 5th place in Mexico’s 2018 Cup of Excellence. E-Cafe, which acquired the farm in 2015, not only excels in coffee production but also supports social initiatives like the Icathus School for underprivileged children. This lot is handpicked and undergoes a 40-hour anaerobic fermentation, then dries for 20-30 days on raised beds in a temperature-controlled greenhouse. At the E-Cafe mill, the coffee is meticulously milled, color sorted, and size graded to ensure a uniform and defect-free final product. The result is a complex and high-quality coffee that embodies E-Cafe's commitment to excellence and community development.

Our Roasting Style
We will try to roast these coffees to an omniroast profile that works in all methods, we roast on a Loring 35kg and will aim for a lighter than medium roast- (40% on our scale) or for you in the know 410-415F end temp, ~10 min total time for all lots with tailoring done for each methods ability to take on heat.
