This lot underwent a 62-hour sealed-bag fermentation under shade, a rare approach in Brazilian coffee that shapes its distinct character. Afterward, it dried slowly on patios under the sun, locking in complexity. It’s coffees like this that keep us coming back.

Our Roasting Style

We will try to roast these coffees to an omniroast profile that works in all methods, we roast on a Loring 35kg and will aim for a lighter than medium roast- (40% on our scale) or for you in the know 410-415F end temp, ~10 min total time for all lots with tailoring done for each methods ability to take on heat.
