14 Finca Pink Bourbon

This washed-process Pink Bourbon lot comes from a dedicated group of 14 producers working with Terra Coffee and Covoya in Palestina, Huila. 

Originally thought to be a mutation of the Red and Yellow Bourbon varieties, recent evidence suggests that Pink Bourbon may be an Ethiopian landrace variety that found its way to Colombia through unknown paths. Regardless of its origins, Pink Bourbon stands out for its unique appearance and flavor profile. The cherries, ranging from light red to soft orange, require careful inspection during harvest to determine ripeness, making the process more challenging than traditional varieties. This meticulous care results in a complex, vibrant cup that rewards the extra effort.
