El Retiro del Quisaya, a family-owned farm since 1832, has been passed down through generations of the Alburez family. Located in La Merced and El Retiro at altitudes of 1,800 to 1,900 meters, the farm thrives on rich volcanic soil and uses traditional wet milling methods. It grows Bourbon, Pache, Geisha, Maragogype, and Typica varieties under the shade of gravilea and inga trees. The farm’s legacy of resilience includes rebuilding after the 1976 earthquake and 1981 conflicts. Today, the descendants of Carlos and Balbina continue producing high-quality, “fancy” grade coffee, preserving their rich heritage and commitment to excellence.

Our Roasting Style
We will try to roast these coffees to an omniroast profile that works in all methods, we roast on a Loring 35kg and will aim for a lighter than medium roast- (40% on our scale) or for you in the know 410-415F end temp, ~10 min total time for all lots with tailoring done for each methods ability to take on heat.
