The lot is then inoculated with a strain of \u003c\/span\u003e\u003cspan\u003eSaccharomyces cerevisiae\u003c\/span\u003e\u003cspan\u003e, a yeast selected for its ability to tolerate alcohol concentrations of up to 15%.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eThe cherries continue fermenting for an additional 120 hours.
